Black Truffles in Cooking
Black truffles are excellent when used in various recipes. Some of the best ways to use them are in mashed potatoes and scrambled eggs, but there are many other ways in which they taste great.
Scrambled eggs with black truffles:
Beat the eggs lightly adding a little bit of cream as you beat. You can add pepper if you wish, but don’t add any salt. Scramble the eggs over medium heat in lightly browned butter. Since truffles are best eaten raw or just slightly heated, add the shaved or slivered truffles at the last minute, just before you take the eggs out of the pan.
Truffled mashed potatoes:
Peel and quarter four medium size potatoes. Cook and then mash. The best way to ensure that all pieces of the potato are mashed is to put them through a potato ricer. Add butter, cream, salt and pepper to taste. Just before you serve the potatoes drizzle it with black truffle oil.
Truffled Risotto:
Cook the risotto the way you normally would adding the truffles at the last minute. Cook the black truffles over very low heat for 45 minutes and then add them to the risotto.
Black truffle oil is excellent for adding taste to food. You can drizzle it over steak or fish. Black truffles do well with meat dishes and dark poultry, but they do not go well with lamb. You can serve them with sauces, wild mushrooms, cheeses and apples. They do need to be simmered slowly to mellow, but if you want to use fresh black truffles, make sure you peel them and slice them in very thin slices.
